I love the simplicity of this recipe. It captures the essence of a summer lunch on the Mediterranean coast.
Warm Mediterranean White Bean Salad
2 14-oz cans white beans, rinsed and drained
2 T lemon juice
1/3 C minced red onion
1 red bell pepper, finely chopped
1 plum tomatoes, finely chopped
1 clove garlic, mined
1/3 C finely chopped basil leaves
Freshly ground black pepper
Place all ingredients in a medium bowl and toss to combine. Chill until ready to serve.
